Dhokla is a vegetarian food item that originates from the Indian state of Gujarat. It is a very less time-consuming recipe & it tastes amazing/heavenly. Those who don't want to eat fried food then dhokla is a best breakfast/ snacks item for them. It is made with a fermented batter of chickpeas flour, semolina, curd & some other ingredients. Fermented batter is used to make the dhokla to be floppy. Here I have not used fermented batter but the result is pretty same. Dhokla is served with mint, coriander chutney or tamarind chutney.
So let's start...
In a bowl add besan, semolina, salt, turmeric powder, red chili powder, ginger/green chili paste, lime juice, curd, coriander leaves, mix it well. Remove all the visible lumps.
Fill water into the boiler. Keep the boiler into the gas & grease the tin or container with oil where you have kept the batter.
In dhokla batter add cooking salt & ENO fruit salt. Mix it well and pour the batter into the container and place it into the boiler. ( You should do this process very fast otherwise your dhokla will not be floppy). Boil for 15-20 minutes.
After 15 minutes, Besan Dhokla will be ready. Switch Off the flame. Separate the Dhokla from the corners of the container with the help of a knife. Take it out on a plate. Cut it into small pieces.
Heat oil in a pan, add mustard seeds & cumin seeds. When it will start crackling, add red chili, green chili, curry leaves, saute for a minute then add sugar & water into it & boil for some second. Now pour it into the dhokla.
Serve the dhokla with coriander/ mint / Tamarind chutney.
