Aambilla is a very famous side dish in the western part of Odisha. It is a mixer of seasonal veggies, curd & a pinch of love. The taste is slightly tangy & is loved by many people.
I remember my grandma used to cook finger licking Aambilla with lots of dedication and love & I used to see and learn the procedures.
In the western part of Odisha aambila is a well known and much-adopted dish in each & every family.
Aambilla is usually served with rice only. So let's start...
Cut all the vegetable into large size, (otherwise, it will mix with water) & add to boil it in a pressure cooker for 1 whistle.
Now take a handi (patila), add water, turmeric powder, red chilli powder, salt, aambula (dry mango), boiled veggies, mix it well
In a bowl, add besan & water mix it well and add into the veggies, now cook it well, when the besan will be cooked, than add curd into it, cook for another 5-10 minutes. Switch off the flame.
For tempering heat oil in a pan, add panchphoran, asafotedia, red chili, garlic, curry leaves, chopped tomatoes & salt, cook it well & put the tempered mixer into the vegetable, garnish with chopped coriander.
Aambilla is ready to serve.
