We Indian's believe that coconut is a symbol of good luck, & it's true also. Coconut is widely used in most of the south Indian recipes. Coconut Laddu or Ladddo is famous in all over the India. Another Indian sweet recipe for you. Coconut laddu made in a different style . Today i have used jaggery to prepare these ladoos. Its quite simple and a must have sweets in this festival season. So let's try....
Heat ghee in a pan, add coconut, fry it well. When moisture out from coconut, add cardamom powder & switch off the flame.
In a another pan add water, when bubbles start then add the jaggery, stir it continuously.
Take water in a bowl, drop the jaggery liquid into water. If jaggery liquid mix in the water than you know than jaggery is not ready for laddu. Again stir it, & check it.
Now add the fried coconut into jaggery, mix it well for 5 minutes.
After that switch off the flame & keep aside for cool down slightly.
Grease your palm with ghee, take some portion of coconut mixture & make lemon size laddus. If you want then you can garnish with some dry fruits. When its totally cool, keep in a container. This can also be used for the prasad .
