Dahi vade is a popular snack in India. It is prepared by soaking vadas in thick yogurt. Dahi vade is also known as dahi bhalle in punjab, & in odisha its called as Dhai Bara. Dahi vade is primarily made of black lentils ( Urad Daal ) batter. Everybody likes dahi vade becuause of its tangy taste. Dahi vade can be prepared in two styles only khatta wala & both khatta mittha wala. I like the khatta mittha wale dahi vade. Ingredients
  • 2 Cups Split washed urad daal ( Black lentils )
  • 1 tsp Grated ginger
  • 4 Green chilli (chopped)
  • 2 tbsp Coriander leaves (chopped)
  • 2 tsp Salt
  • Oil (for deep frying)
  • 4 cup Water
  • 2 cup Yogurt
  • 1 tsp Rosted cumin seeds & red chilli powder
For garnish ( khatte mitthe wale vade )
  • 4 tsp Mint chuttney
  • 3 tsp Termarind chuttney
  • 1 tbsp Pomegranate seeds
  • 1/4 tsp Chat masala
For tempering
  • 2 Green chilli cut into 2 pieces in between
  • 2 Red chilli
  • 1/2 Mustard seeds tsp
  • 7-8 Curry leaves
  • 1 Coriander leaves tbsp
  • 1/4 Salt tsp

Instructions
  1. Wash & soak the urad daal for 2 hours.
  2. Drain the water & blend it in a mixture to a smooth batter.
  3. Heat oil in a pan, wet the palms & take some batter & flatten it to a round shape, make a hole, at the center.
  4. Now slowly slide it into the hot oil.
  5. Fry the vadas from both sides till golden brown, remove the vadas from oil & soak in water for 20 minutes.
  6. Till then roast some cumin seeds & red chilli & powder it.
  7. After 20 minutes remove vadas one by one and push it slightly in your palm (which will remove the access water) then dip into the yogurt ( dumpling into yogurt ).

  8. Take oil in a pan, add mustard seeds, green chilli, red chilli & curry leaves, fry for 2 second & put it into the vadas.

  9. Serve it as per your taste, if someone wants khatte wale then garnish the vades with roasted cumin chilli powder and coriander leaves & if someone likes the khatte mitthe wale then garnish with mint, tamarind chuttney, pomegranate seeds, chat masala & coriander leaves.
