  • 1/4 tsp Turmeric powder
  • 1/4 tsp Red chilli powder
  • 2 cups Yogurt/curd
  • Oil for deep fry
  • 1/2 tsp Salt
For Tempering
  • 1/4 tsp Panchphoran
  • 7-8 Curry leaves
  • 2 Red chilli
  • 1 tsp Coriander leaves
  • 2 Green chilli
  • 1 tsp Oil

Instructions
  1. Cut the brinjal into 2-inch long pieces, wash it well.

  2. In a bowl add turmeric powder, red chilli powder, salt, marinate the brinjal.

  3. Heat oil in a frying pan and fry the brinjal pieces till it become golden brown color. Keep this aside.
  4. pour yogurt in a bowl add water(little) and salt, mix it well.
  5. In a tempering pan add oil, panchporan, red chilli, curry leaves.
  6. Pour it into the yogurt, add the brinjal, mix it well.
  7. Garnish with chopped coriander leaves.
