Dhai Baigun (Brinjal)
Dahi Baigun/ Brinjal is an Oriya dish prepared by using Dahi (yogurt) and eggplant (Baigun). I remember from my childhood days, my mom used to make it at home & we as kids loved it always. Now it was my turn, & i tried wholeheartedly to achieve the same authentic taste. Its a side dish and served with rice. Dahi Baigun is very easy to cook & if you want then you can use garlic also. Any type of black brinjal can be used to prepare Dahi Baigun.
