DudhPuli is a very famous Bengali Cuisine. It's known as Dudhpuli or pitha. It is a coconut stuffed dumpling. I owe the credit of this recipe to Thakumaa ( Our neighbor at hometown). She was a very talented cook and I have learned many authentic Bengali cuisines from her. I tried Dudhpuli for the very first time and it turned out to be very delicious.

Ingredients
For Stuffing
  • 1/2 Grated coconut
  • 1/2 Small Cup Jaggery
  • 2 Cardamom
  • 1/2 Inch Cinamon Stick
For Shell / Puli
  • 11/2 small Cup Rice flour
  • 1/2 Glass Water
  • 2 tbsp Ghee
For Kheer / Milk
  • 1 Ltr Full Fat Milk
  • 3-4 Tbsp Sugar
  • 2-3 Tsp Jaggery
  • 2 Tbsp Grated Cococnut

  • 1/2 Grated coconut
  • 1/2 Small Cup Jaggery
  • 2 Cardamom
  • 1/2 Inch Cinamon Stick
For Shell / Puli
  • 11/2 small Cup Rice flour
  • 1/2 Glass Water
  • 2 tbsp Ghee
For Kheer / Milk
  • 1 Ltr Full Fat Milk
  • 3-4 Tbsp Sugar
  • 2-3 Tsp Jaggery
  • 2 Tbsp Grated Cococnut

Instructions
  1. Take a pan, add the grated coconut, cardamom & cinnamon, roast on a medium flame for a minute. Pour jaggery & stir continuously on high flame till the mixture is not sticking to the pan. Once the stuffing is ready, Switch off the flame & transfer to a bowl.
  2. On the same pan add water & ghee (1/2 tsp) stir for few seconds. Once the water comes to boil, Add rice flour & stir it continuously. Cook it on low flame till everything comes together and form a soft dough. Switch off the flame & cover the lid for 2-3 minutes.
  3. Take a large size of plate, Grease oil or ghee. Transfer the flour mixture to the greased plate. Apply ghee to your palm & knead it well. Make medium lemon size balls & cover with a cloth.
  4. Apply a bit of oil/ghee to your chakla. Then take a ball & flatten it like Poori or Loochi. Place the stuffing in the middle & cover from both side. make it same with other balls.
  5. Boil milk in a heavy pan till the milk will be reduced to half ( in low flame). Now add the puli to the milk (one by one). cook it for 5 minutes. Add coconut powder & at last add jaggery.
  6. Switch off the flame & wait to cool down.
  7. Enjoy !!!!
Recipe Notes

- If you will add ghee to the water than your puli mixture will not stick to your pan.
- Puli can be made with your palm.
- Always maintain the flame.
