Mixed Daal Handvo is a traditional Gujarati savory cake, made from various dals/lentils and rice, sesame seeds and spices. Which is a nutritious meal in its own right. The batter is prepared from lentils and rice and is usually fermented overnight. The grated bottle gourd is one of the main ingredients as it imparts the required softness to the handvo โ€“ such that it is crisp on its outside but soft inside. Go ahead and follow my instructions and be sure to end up with a perfect handvo!

Ingredients
For Handvo Fermantation
  • 1/2 Cup Chana Daal
  • 1/2 Cup Moong Daal
  • 1/2 Cup Urad daal
  • 1/2 Cup Idli Rice
For Handvo Batter
  • 2 Tbsp Bottel Gourd (Grated)
  • 2 Tbsp Carrot (Grated)
  • 1 Tbsp Potato (Grated)
  • 1 Small Onion chopped
  • 1 Inch Ginger (Grated)
  • 3-4 Garlic (Crushed)
  • 1/2 Tsp Turmeric powder
  • 1/2 Tsp Red chilli powder (Optional)
  • 1 Tsp Sesame Seeds
  • 1/2 Cup Butter Milk
  • 1-2 Pinch Asafotedia
  • 1 Tsp Sugar
  • 1 Tsp Salt
For Tempering
  • 2-3 Tbsp Vegetable Oil
  • 7-8 Curry leaves
  • 1/2 Tsp Mustard seeds
  • 1/2 Tsp Sesame Seeds

For Tempering
  • 2-3 Tbsp Vegetable Oil
  • 7-8 Curry leaves
  • 1/2 Tsp Mustard seeds
  • 1/2 Tsp Sesame Seeds
Gujrati Daal Handvo
Instructions
  1. Take all the daals & rice in a bowl. Wash properly give enough water to soak for 3-4 Hours. Drain excess water and keep it aside.
  2. Blend all the daals & rice to a smooth paste in a mixture.
  3. Transfer the mixture to a bowl, add buttermilk & salt. Cover & keep overnight for fermentation.
  4. On the next day morning, add grated bottle gourd, carrot, potato, & rest all the veggies which are mentioned above. Add turmeric powder, red chili powder, sesame seeds, & Salt. Mix properly.
  5. Heat a Pan, Pour 2-3 tbsp of oil. Add Mustard Seeds, Sesame Seeds, & Curry Leaves. Wait till the seeds crackle.
  6. Pour the Handvo Batter Mixture. Spread evenly & Cover the lid.
  7. Cook on a slow flame for 10 minutes or till the base turns golden brown in color and becomes crisp.
  8. Lift the handvo gently using 2 large flat spoons and turn it over to the other side.
  9. Cover & cook for more 5-6 minutes or till the base turns golden brown in colour and crisp.
  10. Cool Slightly & Cut in to Small Pieces.
  11. Serve Immedietly with your Favourite Chuttney.
