Kalara Besara
Many of us don’t like to eat Bitter Gourd ad It’s taste bitter but its filled with lots of nutritional values. There are so many recipes of Bitter gourd in odisha like Kalara Alu Bhaja, Gota Kalara Bhaja, Kalar Chips and Kalara Besar. We use mustard paste (we call it Besara) in most of the dishes. Today will share you the recipe of Kalara Besara. It’s a very simple recipe & has a unique taste. In Odisha, It’s a side dish served with steamed rice. I remember in my native place people use Bamboo Shoot & white Chana (Dhala Buta) in this recipe But it’s totally optional as some of the people don’t like the smell of Bamboo Shoots. Ingredients
Sorisa Besara ( Mustard Paste )
  • 1Tbsp Mustard seeds
  • 7-8 garlic
  • 2-3 Red chilli
  • Water as required
Kalara Besara Ingredients
  • 2Medium Size Bitter Gourd
  • 3Medium Size Tomato
  • 2Tbsp White Chana ( Buta )(Boiled)
  • 2-3 garlic
  • 1 Red chilli
  • 1/4Tsp Turmeric powder
  • 2Tbsp Mustard Oil
  • 1/2Tsp Panchphoran
  • Salt to Taste
  • Water as required
Instructions
  1. Put all the Sorisa Besara Ingredients In a mixture Grinder & make a smooth paste. Keep Aside.
  2. Wash the bitter gourd properly & cut into small/thin slices.
  3. Heat a pan, Add 1 tsp of Mustard oil, Add the chopped Bitter Gourd, Add a 1/4 tsp of salt & fry it till its slightly smoothens.
  4. In another pan, Add required amount of mustard oil, Add 1/2 Tsp of Panchphoran, Red chili & garlic. Fry till the garlic turns to brown in color.
  5. Add the Blended Mustard Paste & cook for a minute. Add chopped tomatoes, turmeric powder and salt as required, Mix well & cook till the tomatoes smoothen.
  6. Add Bitter Gourd & Boiled Chana, add water as you require, mix well & cover the lid.
  7. Wait till done. Serve hot with rice.
