So if you have something to celebrate be it a person or an event, a Bengali family will serve you hot luchi with aloor dom for dinner accompanied by several other things.. Luchi is a deep-fried flatbread made of all purpose flour that is typically a Bengali / Odia cuisine & its best served with potato curry (masala alu). It is almost like Puri, but while Puri is usually brown, Luchi is always white.

For Luchi
  • 1 cup All purpose flour
  • 2 tbsp Wheat flour
  • 3 tbsp Oil
  • 1/4 tsp Salt
  • Oil (For frying)
Masala Aalu
  • 1 1/2 cup Small size potato (boiled & peeled)
  • 1 medium Onion (chopped)
  • 4 garlic (crushed)
  • 1" Ginger (chopped)
  • 1 Red chilli
  • 4 cashews
  • 1/2 cup Tomato puree
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • 1 tsp Garam masala
  • 1/2 tsp Kasuri methi
  • 1 tbsp Malai (optional
  • 1 tsp Coriender leaves (chopped)
  • Water (as required)

  • 1/2 cup Tomato puree
  • 1/4 tsp Turmeric powder

  • 1/2 tsp Kasuri methi
  • 1 tbsp Malai (optional
  • 1 tsp Coriender leaves (chopped)
  • Water (as required)

Instructions
  1. In a bowl, add the flours, salt & oil, mix it well, add water as required & knead it well. Now cover it for 15 minutes.
  2. Heat oil in a pan, add ginger, garlic, cashew,red chilli, onion stir it well, when the onion becomes transparent, switched off the flame & blend it to a smooth paste.
  3. add oil in a pan and when the oil is heat add turmeric powder, red chilli powder, mix it well, now add the blended paste into it and fry it well.
  4. Add tomato puree, fry it well, after the oil releases from pan, add salt, garam masala, kasuri methi, malai & water. Stir & boil it well. Now add the potatoes, fry it for 5-10 minutes, add coriander leaves. (water as per your choice). Masala aalu is ready.
  5. Now heat the oil for frying luchi, Take a small ball and roll it into little thick circle.

  6. Drop the poori in hot oil and press the top with a slotted spoon. It will puff up. Flip over and cook for few sec. Don't over cook it.

  7. Remove from oil & serve with masala aalu & some sliced onion.
