Making Kofta
  • 200 gram Paneer (Cottage Cheese)
  • 50 gram Khoya/Mawa
  • 1 medium Boiled Potato (Grated)
  • 1/4 tsp Salt
  • 3 tbsp Corn Flour
  • 2-3 tsp Almonds/Cashews (Chopped)
  • 2 tsp Rainse (Kishmis)
  • 1/4 tsp Ghee
Making White Gravy
  • 1 large Onion chopped (soak in water)
  • 1 tbsp cashews
  • 1 tbsp Almonds
  • 1/2 tbsp WaterMelon Seeds
  • 1/2 cup Milk
  • 1 inch Ginger
  • 7-8 garlic
  • 3 Green chilli
  • 2 tbsp Honey
  • 2 tbsp Cream/ Malai
  • 1 tsp Kasuri methi
  • 1/4 tsp cardamom powder
  • 1/4 tsp Blackpapper Powder
  • 1 Bay leaf
  • 2 Green cardamom
  • 1 tsp Rosted cumin & red chilli powder
  • 1 tbsp coriander leave ( chopped )
  • Salt to Taste
  • 1 tbsp Butter
  • Oil for deep frying & for gravy
  • Water as you needed

Making Kofta

  • 3 Green chilli
  • 2 tbsp Honey

  • 1 tsp Kasuri methi
  • 1/4 tsp cardamom powder
  • 1/4 tsp Blackpapper Powder
  • 1 Bay leaf
  • 2 Green cardamom
  • 1 tsp Rosted cumin & red chilli powder
  • 1 tbsp coriander leave ( chopped )
  • Salt to Taste
  • 1 tbsp Butter
  • Oil for deep frying & for gravy
  • Water as you needed
Malai Kofta (white gravy) - With Honey & Almond
Instructions
  1. Add ghee & the chopped dry fruits, in a pan. Fry it for 30 seconds. Keep aside.
  2. Combine grated paneer, mawa, salt & 1 tbsp corn flour. Mix it well & make a smooth & soft dough. Divide the dough in equal parts.
  3. Take one portion of dough, flatten it, Keep some dry fruits inside & cover the edges & make balls. Roll it into the corn flour. Do the same with the rest of the dough.
  4. Fry all the kofta in medium flame. ( Drop one by one). When it turn to golden brown color then remove from the heat.
  5. In a pan add the ginger, garlic. Saute for a minute, Add soaked onions, cashews, almonds & water melon seeds. Fry it for 2-3 minutes then turn off the flame.
  6. When the mixture cools down, Blend it to a smooth paste. Add milk as required.
  7. Heat oil (1 tsp) in a pan, Add butter, bay leaf & green cardamom then add the blended paste into it. Saute for 2 minutes.
  8. Add cardamom/black pepper powder, kasturi methi, green chillies, salt & honey. Mix it well. Add water Into the blending jar and pour it into the gravy. Cover the lead & cook it well.
  9. Add roasted cumin/red chilli powder & cream/malai, Cook it for 2 more minutes. Add coriander leaves & switch off the flame. Add the kofta balls & serve it hot.

Recipe Notes

- Don't use the turmeric powder & tomato.
- The cream is not necessary if you have fresh malai.
- Use milk in place of water.(It enhance the taste)
- Fry the kofta balls in medium flame.
