In odisha, you will get varieties of greens (Saaga). And these saaga recipes are made in different styles, Like Saaga Bhaja, Saaga Kharada, this is used in different types of lentils and curry. Saaga Kharada compliments best with every odia’s favorite dish, water rice (Pakhala). Piyaja saaga or spring onions are commonly used in many Chinese recipes. But we use it in a very simple recipe which is quite common all across odisha. Ingredients
For Boiling Saaga
  • 1 SmallBunch Piyaja Saaga (Spring Onion)
  • 1Small Brinjal
  • 1Medium Tomato
  • Pinch of salt
  • Water to boil
For Tempring
  • 1Tbsp Mustard Oil
  • 1/2Tsp Mustard seeds
  • 2nos Red Chili
  • 5-6 Bhaja Badi
  • 5-6 Garlic (Chopped)
Instructions
  1. Wash all the veggies in running water. Drain excessive water & finely chop the veggies (Greens, Brinjal, Tomato). Keep aside.
  2. Add water in a pan as required & keep to boil. Add all the chopped greens, veggies, add a pinch of salt. Mix well & cover the lid.
  3. Mix in regular interval till the veggies & greens become smooth. Switch off the flame & keep aside.
  4. Add 1 Tbsp of Mustard oil in another pan. Add Mustard seeds & red chili.
  5. Add garlic, wait till the garlic turns to golden brown.
  6. Add the boiled greens & mix well. Cook for 5-6 minutes. Add the Bhaja Crushed Badi. Mix well & serve hot..
