I tried this special south Indian dish for the very first time in my kitchen. My husband doesn't like to eat Brinjal but he is a very big fan of south Indian cuisines. Today when I opened my refrigerator and I didn't find anything except some brinjal then I thought to make Vankaya Masala Brinjal. I was quite nervous as it was my first time but to my surprise turned out really well. It made my husband's lunch more delicious and he appreciated it a lot.

For Masala
  • 3 tbsp Peanuts
  • 1 tsp Coriander seeds
  • 1 tbsp Coconut Cuts
  • 1 tbsp Sesame Seeds
For Curry
  • 300 grm Brinjal
  • 1 medium Onion chopped
  • 1 tbsp Ginger / garlic paste
  • 7-8 Curry leaves
  • 3-4 Mint Leaves
  • 1 small cup Tarmarind Juice
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Cumin seeds
  • 1 tbsp coriander leave
  • 4 tbsp Oil
  • 1 tsp Salt
  • 1 small cup Water

  • 1/2 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Cumin seeds
  • 1 tbsp coriander leave
  • 4 tbsp Oil
  • 1 tsp Salt
  • 1 small cup Water
Venkaya Masala Brinjal
Instructions
  1. For masala, heat a pan, add peanuts, coriander seeds & coconut cuts. Roast it well. At last, add the sesame seeds again roast for a minute.
  2. When the roasted ingredients will cool down. Put all the ingredients in a blending jar, add a little water & blend it to a smooth paste.
  3. Wash the brinjal & cut it into 4 pieces in middle. In the same pan add oil & cumin seeds. when the seeds will start spluttering then add the finely chopped onion, fry it till become slightly golden.
  4. Now add the ginger/garlic paste, curry, mint leaves, turmeric, red chilli powder & salt, Mix it well. Add brinjals & water, stir it well & cover the lid.
  5. When the brinjal will get cooked around 60% then add the blended masala paste, tamarind juice & cumin powder. Cook it for another few minutes.
  6. When the brinjals will get cooked properly than garnish with fresh chopped coriander leaves.
  7. Serve hot with steamed rice.
